Sugar – The Bitter Truth

Robert H. Lustig, MD, UCSF Professor of Pediatrics in the Division of Endocrinology, explores the damage caused by sugary foods. He argues that fructose (too much) and fiber (not enough) appear to be cornerstones of the obesity epidemic through their effects on insulin. This lecture is just over an hour but contains some eye-opening facts. For example, we have an obesity epidemic in 6-month old children now. Doctor Lustig relates this to the introduction of corn syrup and corn syrup solids now being used as a sweetener in infant formulas. Another interesting part of the lecture is just how few foods are available in restaurants and grocery stores that are free of high fructose syrup. At McDonalds, he says, only a Diet Coke, French Fries, and Chick Nuggets don’t have corn syrup. However, the dipping sauce for chicken nuggets is full of it.
